Eating sweet potatoes
Since a number of us are trying to start some sweet potato slips this spring, I thought it might be fun to ask for your favorite sweet potato recipes. What do you have?
I learned a scalloped ham and potatoes recipe from my dad many years ago, and am going to try to adapt it to sweet potatoes. I'll let you know how it goes, or not.

I made scalloped ham and sweet potatoes not too long ago. It was soooo good! Even the kids loved it.
Sweet potatoes are also good mashed and used in place of regular potatoes on shepard's pie. Yum!
And of course, who could forget sweet potato fries! Double Yum!

Let me get my books together.
I make a sweet potato casserole with pumpkin pie spices and chopped pecans at Thanksgiving, instead of plain old syrupy marshmallow topped sweet potato casserole (which I also love, but have to cut way back on my sugars)

Sweet potato fries are at the top of my list but here is something else my family loves. Sweet potatoes, red onion, shallots, red peppers, and zucchini toss with olive oil, salt, and Moroccan spices and roast. The cinnamon, turmeric, and cumin bring out gorgeous flavor in the veggies. You can pretty much make it any blend of veggies to roast.

Wreanne, that recipe really sounds interesting. I usually do a casserole with a brown sugar/butter/pecan praline topping, but we also love them baked in the microwave & sprinkle with brown sugar, butter and cinnamon. I think I'll try the fries too. Do you just do them like regular fries?
Funny, but last year I tried & tried to get a sweet potato to sprout, but never did, usually don't have any trouble. This year I have 2 that with the jar filled with roots, lots of sprouts & several cuttings rooted.

We do the fries two ways depending on mood, wide steak size fries or the skinny type. Toss with a little oil and salt, or cinnamon sugar for sweet ones. I will also use rosemary for the savory ones too. I bake at 400 til soft inside and crispy outside. I have also been known to grill green onions and blend into mayo for dipping.

There are great sounding recipes on here that I am excited to try.
I shred them and cook with hashbrowns. I love adding onions, peppers, and garlic also.
Mash and mix with regular mashed potatoes. Using sweet potatoes or pumpkin this way adds nutrition and a buttery look.

This is really good and good for ya...
(Baked) Sweet Potato Fries
1 large potato cut into pencil sized slices
1 tablespoon olive oil
1 tsp paprika
1/2 tsp salt
1/2 tsp black pepper
1/4 tsp cayanne pepper
Put a tablespoon of oil into a baking pan and add the the cut potato. Stir them to coat the potatoes. Put all the dry ingredients into a plastic bag, and mix. Add Potatoes and shake to coat thoroughly. Pour back into the pan and bake at 425 for 25 minutes or until browned.

Here are my three favorite recipes using sweet potatoes, if you don't include baked sweet potatoes, with butter, cinnamon and just a touch of brown sugar.

Sweet Potato Chicken Pot Pie
(you can add diced cooked sweet potatoes to the pot pie if you have any left over from the pastry topping)

I dice or "french fry cut" them with carrots, celeriac, beet root (optional), quinces when available, sprinkle with salt, fresh ground pepper, oregano, rosemary and any other herbs I have at the moment, and either saute them in a small amount of oil in a large skillet for about 7-8 minutes, or sprinkle with oil and bake in the oven for 15 minutes or so. I like to toss in a few cardamom pods for lemony taste, but I am a freak.
When done, I drizzle a bit of balsamic vinegar over and let sit for 10 minutes.
They can be eaten warm or cold. Makes a great side dish or salad, whichever you want to call it

- This last Thanksgiving I baked them and just put Coconut milk, coconut flakes, kosher salt, and pomegranate seeds on top.
- Since I don't always have the pom seeds handy, my new staple is just baking them and topping with butter, honey, and coconut flakes to break up the baby-food like texture.

Something else I like to do with sweet potatoes (or winter squash) is make ravioli.
Gyoza (potsticker) wrappers, or eggroll wrappers cut to size work fine for the dough, or you can make your own pasta dough if you have a pasta machine. For the sauce, my favorite is browned butter with frizzled fresh sage leaves and a light sprinkle of shredded Parmesan cheese. Yum!

My daughter in law just fed me a Philippine dessert. Tapioca, bananas, jackfruit, sweet potato and sticky rice balls all cooked together. It was actually pretty good.

No, but I love sinagang a tamarind based soup. The sour undertones cut the flavor of the boiled pork. Can also be made with shrimp and other shellfish. I keep a jar of tamarind concentrate in the fridge if you have a recipe.

I don't have a recipe, but I have a lot of roasted ham, sliced raw sweet potatoes... and some raw tamarind, and some apples. Am thinking of trying to make a scalloped casserole..... I'd boil the tamarind pods in a small pot in some water, first, or try to otherwise extract the pulp? I know I like tamarind, I'm just not familiar with working with it.

Whenever i hear about tomatoes. Sun dries tomatoes comes to mind which i have baked two days ago. I will try this sweet tomatoes during this weekend.
