We had beet borscht last night with carrots, beets, potatoes, peas, DILL, ALL from my garden... cool..
And tonite we are having Artichokes and perhaps a pesto with my basil ..(not together)
The artichokes I will boil and then dip the leaves in balsamic vinegar Dill from my garden, garlic from my garden and soy sauce.

Tonight we had angel hair pasta with basil/spinach pesto sauce, lettuce salad with cherry tomatoes, sugarsnap peas, and a teeny carrot (I pulled to check carrot progress), and turnips with carmelized onions. Everything from the garden except the pasta and onion.

Out the garden we had two five inch long courgettes, 1/2 pound of shelled sugar snap peas that were from well filled pods for tea meal .
For lunch we had the last bit of " Salad bowl " lettuce before it went to the compost bin as it was getting slightly bitter & some salad onions . That lettuce was started off at the beginning of November last year and grown on over winter in the glasshouse . Goodness knows how many feeds it has given us though it must be around three or more a week on average.
Yes it is 19 inches across not centimetres ( it is almost 500 mm )

This is from Sunday's harvest. We just love the Cherry tomatoes for Summer salads. The heat is starting to bake my tomatoes, so I covered them with some Sun Shade material. I hope it works.

Roasted veggies in some butter: okra, squash, eggplant, red and yellow pepper (also some onion not from the garden) Delicious! All just picked today.

Yes, GWN, okra needs hot days, hot nights (but then, tomatoes are also basically tropical). I grew fond of okra when living in Texas, and keep trying to grow it. This year, the hope for six plants rests totally in the greenhouse, keeping it as warm at night as possible. But there are two okra plants in the bale bed, which just now is being left open at night. The dirt (Mel's mix) in the bale bed is warmer than outside because the hay is actively decomposing. My fingers are crossed that there may be some pods this summer, mainly for pickled okra, some for frying. Mmmmmm!

We just finished eating a sort of stew made of zucchini and Romano beans from my boyfriend's garden. I just wish the tomatoes in either garden were coming along, 'cause the canned tomato sauce left a weird aftertaste.

This is a "group" picture to be sent to a non sf gardening friend, but todays harvest was just a white ghost buster eggplant, some banana peppers before and after extreme heat wave, and a couple more carrot-week carrots. I've never eaten so many beets in my life! Some of the carrots are going into carrot cake, the rest are being glazed. Has anyone else noticed the absence of beet recipes in Mel's cookbook? Yes there's not a whole lot you can do with them, but I thought it was kind of cute, no beets for Mel?

Si Si Nonna...beets are heaven! My favourites are the orange ones and I love to roast them in a little olive oil. I saute the greens with olive oil and garlic. Blissful dinner right there!

I love beets, but there is no recipe for them in Mel's cookbook!

My daughter includes beets in this recipe:
Beets, carrots, parsnips, sweet potatoes, cloves of garlic, onion.
Cut the veggies into bite size pieces.
Keep the garlic cloves whole after peeling.
Place in a shallow pan in a single layer. Drizzle with olive oil.
Roast in a 425 degree oven for 15 minutes. Stir and roast until tender.
I ate so much of this when she made it that I suffered - not because it wasn't good - I just over did.

Beets seem to be the one vegetable in the garden that has been trouble free and grown perfectly. I boiled and pickled my first harvest. 2 jars ready to eat with my corned beef hash and Lancashire hotpot in the winter! We also love pickled beets on a salad.
my second harvest I have boiled them and vacuum bagged them for use in greek salads and the like.
My athletic hubby and son are wanting the next batch for juice !

Pickled beets. Yes. When my son was a toddler he would hit the tray of his highchair and yell "more beeps". Funny how little things like that stick in a Mom's head. I made some pickled beets a couple of years ago and gave some to him at Christmas time. The label said "beeps".

Pickled beets
I know a lot of you make pickled beets to can, but how do you keep them that long? A two gallon jar lasts about a day in my daughter's house. And she often adds a dozen hard-boiled eggs to the beets. No one is allowed to touch them for 24 hours after she puts them in the fridge, although she has been known to have a "beet burglar" in the middle of the night. LOL.

No -- It is actually almost everyone else who eats them, although she gets her share, too. One Thanksgiving we had pickled beets, buttered beets, Harvard beets, and a beet gelatin mold along with our turkey and trimmings.
