'Chipotle' Inspired Casserole

I love eating at Chipotle - a mexican-ish fast food restaurant.
It's easy to make at home!
1 cup white rice, cooked, infused with 1 T lime juice, 1/8 cup cilantro, chopped, and 1 T butter
1 can black beans, drained (or cook 1/2 cup dry beans according to package directions)
stir fry sliced onions and green peppers with a little garlic
blend together diced tomatoes and corn (removed from cob) along with your favorite 'salsa' like flavors
grated cheese
sour cream
layer all iexcept sour cream n 9x12 casserole dish wiped with olive oil (or pam spray if you ingest soy) in the order listed.
bake in 350*F oven about 1/2 hour or til bubbly.
serve with tortilla chips and sour cream, along with add'l salsa.
Yum!
Freezes well, too.
You can add meat, too if you desire - I just happened to make this one vegetarian.
It's a great way to showcase all those lovely vegetables/fruits from the garden!
