Mel briefly mentions this planting technique in his book but with no pictures. I didn't understand by his description.

Any step by step pictures?

Hmmm.  And all this time I thought it was a technique invented by my mother 50 years ago!  She always pinched the lower leaves from a potted tomato plant and laid it down in a trench, knowing the bare stem buried thus would sprout additional roots.  She was (and at age 92 still is) a successful gardener, so I copy a lot of her techniques.  When planting a tomato or pepper plant in a deep ornamental pot for the deck, I pinch off lower leaves and sink the dirt ball from the initial pot as deep in the ornamental pot as possible and, holding the naked stem upright, fill
 the pot past the dirt ball and as far up the stem as the new pot allows.  Oh, and this is a good time to place a supporting stick for the new tomato.  Nonna, who is getting antsy for the feel of warm dirt.
