I use a kitchen digital thermometer.

 A simple one off eBay for a few dollars that has a 3 foot long probe wire & a simple temperature range .. say 20 oF to 200 o  F +_ 2 %  ..

Slip the wired probe down a 1/2  internal dia copper tube that has one end flattened and then slip it deep into your compost . ( I cut the flattened end into a diamond shaped  spear point to make it easier to insert .

Once used you can pull the probe & wire out and use it else where .. putting it back down the tube whenever you feel the urge to se the heat of the pile.
 The tube being copper picks up the heat of the pile very quick , so 40 seconds after being inserted to the middle it will have reached a good even temperature in the middle of the pile .

If you want to spend a few dollars more there are some WIFI set up's that have a range of over 100 feet

20" probe thermometer by Compos Tumbler (R). Probably bought it off Amazon or eBay.
