Re: What are you eating from your garden today?
we harvested the last of our corn tonight and having it for dinner along with
chicken pasta with fresh curry from the garden!
picked some more beans and a few cucumbers along with a bunch of tomatoes some are just blushing but with some heavy rains we had for a few days they were starting to crack so we thought we would just let them ripen on the counter
hugs

Re: What are you eating from your garden today?
quiltbea this is the recipe i did (half batch)(9 pints).......i will try and fine the web link to the reciepe....here it is...they have a video too
http://canningusa.com/IfICanYouCan/Salsa.htm
i needed 7lbs of tomatoes....i had six pounds of my own from the garden....i had seen another video where someone replaced some of the tomatoes for one can of tomato sauce to thicken up the sauce and give it a nicer red color.....so that is what i did...
6lbs of tomatoes
i 15 oz can of tomato sauce
9 peppers.....i used my own sweet banana peppers and bought one red and green pepper to add some color to the salsa....( also needed to know how much a bell pepper weighed so i knew how many banana peppers to use to = 9 peppers all together)
3 cloves of garlic (optional) i used 2 cloves of reg garlic and one clove of elephant garlic
4 1/2 onions....i used one large purple onion and three med sweet walla walla
3 bunch's of Cilantro
1/4 cup of lemon juice
1 TB of salt
pepper to taste
Tabasco to taste
mix tomato, peppers, onions, garlic, lemon juice, salt, together and let it simmer for 10 mins.....i let mine simmer for about 20 mins because there seemed to be a lot of water.....then i added the Cilantro and can tomato sauce and let it simmer for about 10 mins or so until it reduced down.....
filled jars to 1/2" head space
water bath for 15 mins
i ended up with 10 pints
it turned out really yummy....

Re: What are you eating from your garden today?
Pulled giant leaves of swiss chard and decided to use up some garlic cloves sitting on the kitchen counter.
6
INGREDIENTS
2 bunches Swiss chard (about 1 1/2 pounds each), ends trimmed
3 tablespoons extra virgin olive oil
3 garlic cloves, crushed with side of chef's knife
1/2 teaspoon salt
1/4 teaspoon crushed red pepper
PREPARATION
1. Rinse greens well. Cut ribs and stems from leaves. Cut ribs and
stems crosswise into 2-inch pieces; set aside. Cut leaves into 2-inch
pieces.
2. In 12-inch skillet, heat oil over medium-high heat until hot. Add
garlic and cook 1 minute or until golden, stirring constantly. Add
chard ribs and stems and cook, covered, 5 minutes or until almost
tender.
3. Add chard leaves in batches to skillet, stirring to wilt leaves.
Stir in salt and crushed red pepper. Cook, covered, 5 minutes or until
leaves are tender and most of liquid evaporates, stirring occasionally.

Re: What are you eating from your garden today?
Finally gave up on the cherry tomatoes. Not a single one ripened, and it wasn't until September 15 that I got the first baby tomato on the plants! I started them indoors in January and put them out in May, but it was too hot for them to set fruit for a long time. I only got about 20 tiny tomatoes, but I'll use them to make a green tomato relish today.

Storing Tomatoes
I was lucky enough to get tomatoes this year. I wash, take off the stems and blend them in a high quality blender then put them in zip -lock bags or quart jars in the freezer. I use them for spaghetti sauces and soups. They are so fresh tasting and the nutrients from the skins are not wasted because they are not taken off. They keep many months in the freezer. I can easily store the small cherry tomatoes this way as well.
Re: What are you eating from your garden today?
Fried up an eggplant from the garden this evening. Maybe not the healthiest way to eat eggplant, but it sure is good! Got at least one new baby eggplant on each of my two plants, so hopefully, I'll harvest some more before cold weather takes them!

Tonight's supper, braised chicken leg with fresh green beans, tomatoes, onions, poblano pepper and garlic and basil over pasta, with a light dusting of fresh grated parmigiano. The garden is almost done. but supper was delicious.

picked a suuuper sweet sugar baby watermelon. MAN was it sweet. My grand daughter ran all over slurping it down, and asking for more! We have one more on the vine..waiting for it to ripen also. Planted two boxes of goodies for our fall garden too

Red potatoes
I'm harvesting a lot of red potatoes this year. I kept very small ones from last year in a cold dark place and planted them this year. They did great! I like to roast them along with other vegies like squashes, carrots, beets and parsnips in the oven with olive oil and seasonings.
Re: What are you eating from your garden today?
Whooohooo! I had my very first salad from my very first-ever grown salad greens for lunch today - snipped young outer leaves from mesclun mix, Romaine, black seeded Simpson, radish greens, beet greens and Swiss Chard greens. I added a few fixings I just had on hand - a little shredded cheese, some bacon bits and some jarred banana pepper rings, with some diet dressing. It was pretty tasty.
It would have been nice to have an actual radish with it, but they're not looking terribly promising right now. It's been almost a month since they sprouted and I still don't see any red radishes showing along the soil line. I wanted so badly to clip a few green onion greens to go in it, but I'm trying growing them from seeds and they're still tiny yet, so I didn't want to stunt their growth.
How nice to just be able to go snip a few leaves when you feel like having a salad! I know gardens are winding down now for some in colder climes, but if you're still harvesting - what are you eating from your garden?

Ate the first of my snap peas and just about the last of my green beans in a stirfry for lunch today. So excited to have peas again; I'd missed them. Really looking forward to broccoli if I can win my battle with whatever is eating the plants (sprayed Thuricide again today).

Today I harvested sunchokes, carrots, and broccoli shoots, and ate some of my canned green beans.
Re: What are you eating from your garden today?
Took the frozen Broccoli out of the freezer and had with chicken and made a big starter salad consisting of Spinach, Kale, Cilantro, one Carrot plus its chopped green tops and some Purple Mizuna left over from the fall. Longest lasting lettuce (really an Asian green) I've ever had!!!!

Re: What are you eating from your garden today?
Had my first big salad from the garden with the wife. Bunch of lettuce types. Tossed a Vorlon tomato in as well. Been using the swiss chard when I make homemade potato skins the past couple weeks. Waiting for sugar peas blossoms to turn into fruit. Still got some tomatoes on the vine ready to ripen but a bunch on the window sill that were picked a month earlier are finally changin.

Re: What are you eating from your garden today?
I ate from my garden a couple times this week! I trotted out to my cold frame a few days ago, right after we got a really deep freeze. I was sad to see that my lettuce in the cold frame was frozen. But instead of letting it just go to waste, I harvested it (quite easy; when it's frozen it just snaps off) and used it like you might use frozen spinach!
I also pulled out my giant bag of frozen cherry tomatoes. At the end of the season, I was getting tired of thinking of ways to use my toms, so I ended up freezing the last two weeks worth. I broiled a handful up tonight to put on whole wheat spaghetti with pesto, broccoli and a little Parmesan cheese on top.

Re: What are you eating from your garden today?
I made a pot of vegetable beef soup late last night and added some shredded chard to my store bought frozen veggies. I like to make my soup the night before serving. The flavor seems to improved for sitting in the fridge and reheating.
I have enough lettuce and young spinach in the garden to make a salad to go with it today.

We're having blt's, with Calmar Lettuce. First 'head lettuce' I've ever grown and had it make a head. I thought it was a leaf lettuce.
