Deb's, I've put both "Don't Panic" books on hold at the library. Thanks! Looks like I'll be waiting a while for them, but since I don't have a spare inch in my freezer or fridge most days as it is, I can wait. (I've got hubby on board for an extra freezer in the garage - now just waiting for a decent used one to pop up on craiglist for the right price).

Rose, good to know about the pork. I bought a couple of pork roasts spontaneously since they were on sale and cooked them in the crockpot with some onion soup and then shredded and froze the meat. I was thinking I could pull out a bag full and heat it up with barbecue sauce to serve on buns for a quick and easy meal sometime. But since I've never done it before, I've been nervous that I wasted all that meat (and the hour it took me to shred it all!).

I'm not sure what else to make with shredded pork... Maybe pork tacos or chimichangas?

GWEN you could use the pork in stir fry Very Happy and pork fried rice Very Happy i even thought using the pork for french dip sandwich with au jus ...but use pork instead of roast beef.... Very Happy

Deb's...thanks for inspiring us to make pot pie Very Happy we made some tonight and had family over for dinner and there was enough pie filling left over to put in the freezer for another time Very Happy something i would not of thought of doing and it turned out yummy!....we even were able to use some leeks, green onions and carrots from the winter garden!

The shredded pork makes great tamales and enchiladas. I slow smoke one every couple of months just to make them and freeze them. Just another option.

Yesterday I came home from school to the heavenly scent of Hawaiian Chicken in the crock-pot. Thank you Ray! There are three more in the freezer. YUM!

The recipe called for chicken breast (boneless, skinless) and at 1.49 a pound at the restaurant supply store we bit the bullet and bought a box. It is excellent meat but we both agreed it would be just a tiny bit better if it was made with thigh meat. Zero complaints about the finished product, just an observation.

Debs the Hawaiian Chicken sounds yummy.....would love to have the reciepe Very Happy i like the idea of having some crock pot meals ready to go too!

our family is really enjoying our freezer meals... its saving us a lot of money too!.....buying on sale and in bulk is the key

keeps us away from fast food too!

Gwennifer, you could whip up a large batch of green chili with some pork, it freezes well too! We eat it over refried beans and cheese wrapped in tortillas, smothered with green chili and topped with lettuce, tomatoes, and sour cream!
