I have made this using cabbage. I think the next time I have lots of zucchini, I will give a try using zucchini. Jo

Freezer Slaw

1 Med. cabbage-grated-see note below
1 carrot-grated
1 sm.sweet pepper-chopped
1 tsp salt
mix above ingredients together,let stand for 1 hr, drain off water.

Mix 1 1/2 c. sugar, 2 c vinegar,1/4 c water, 1 tsp. celery seed(or salt), 2 tsp. mustard seed.
Bring to a boil and boil 3 Min.
Pour over cabbage mixture and let stand til cool.
Put in jars/containers and leave 1 in. headspace. Freeze. Thaw to eat, it can be re-frozen if not eaten.

I cut the cabbage like sauerkraut, long and very skinny, looks like kraut but tastes like bread and butter pickles. It is good eaten as a slaw and won't spoil in the heat. Also good on sloppy joes or hot dogs.

This might be a dumb question, but can you freeze in Ziploc bags? I'm picturing hot corned beef / rye sandwiches with this slaw.

Be sure to use bags that are for the freezer, and get out as much of the air as possible. A little hint: get as much of the air out as possible, then put a straw thru the zipper end, suck out the air, then real quick, pull out the straw and close zipper.
This takes some practice, but I use this method for all kinds of stuff. It's easier than breaking out the seal-a-meal.

Little Jo, Thanks. I will vacuum seal the best I can.

I used the crevice attachment on the small shop vac when I sealed dried stuff in Mylar (with Oxytabs). Super washed it first. Then ironed the corner to seal. The straw almost made me pass out!!
