Radish Green and Goat Cheese Omelet

Radish Green and Goat Cheese Omelet
1 1/2 tbsp finely diced red onion
Greens from 3 radishes
3 eggs
salt and pepper
cooking oil spray
1 oz soft style goat cheese like chevre or boursin
Give your favorite egg skillet a quick spray of cooking oil
add the red onions and sautee a minute or two
roughly chop the radish greens and add to the skillet
add a touch of salt
Sautee until the greens start to wilt down a bit, if they they start to get watery, then remove, drain, and pat dry
Break the eggs into a little bowl with a touch of water and whisk them (the water helps make a fluffy omelet)
add eggs to the skillet with greens and onions and make omelet as you normally would
Remove omelet from pan to plate, add goat cheese to top or before folding
This omelet would be good with some fresh herbs such as chives or thyme sprinkled over the top as a garnish
