I like it when you can save some veggies to eat later on.

They're Muncher. I bought a packet of seeds from Walmart for .20 , American Seed Company. I planted 2 squares of them (one square has 2 and the other has 3, I didn't have the heart to pull that third plant, it was so healthy looking).

Here's the plant's this morning, sorry it's fuzzy, humidity.

Look at those perfect slices. You either have a food processor or knife skills that would make Alton Brown jealous!

I wish I could do that with a knife, lol. I used a mandolin, took about 5 minutes.

That's the way mine looked less than 2 weeks ago, quiltbea. I was so excited to see the little babies. The entire thing is loaded now. We are not even that big into cucumbers. But the old man does like pickles.

Thank you for the compliment, Rose and best of luck with your new plants. I bet they will do great for you.

It looks like I will soon be buried in an avalanche of cukes. Have done pickles the long and hard way many times in the past but am really not blessed with time or mood to do all that right now. Should I just do refrigerator pickles but how many can I do and how long will they keep. I cant have 2 shelves of my refridg holding just pickles for the next 6 months. Do they dehydrate worth while are there other ways to put up cukes for later use. Need helpful ideas, please. And Thanks because I know many are always helpful here.

I don't have the room for too many refrigerator pickles either. I didn't have enough cukes to mess with, so went the easy route. I've read they will last 9-12 months in the fridge. Next, I plan on doing sweet freezer pickles. I did them last year and they do turn out pretty good.

Here's a website with recipe for dehydrating cucumbers and using them for making pickles. I think this gal is the queen of dehydration. I would love to get into dehydration, but so far, it's only a day dream.

Thanks Mom for the link. I like to dehydrate even year around making trail mixes and several regular recipes when I get on the raw food kick during winter months. To a raw foodie a dehydrator is the stove and oven. I have several of them. The extra heat feels so nice on cold days. And also a big thanks for pointing me to the www.globalbuckets.org . My best gardening results so far this year are in very similar wicking buckets using MM. First got that idea while surfing youtube for ways to improve my gardening results. Dehydrating cukes to later make pickles sounds very much worth checking into.

Westie, I have used the oven before for dehydrating for jerky. I have a propane stove now, so kind of refrain from using it. Propane has gotten expensive, so I save it. I sure would love to get a dehydrator. I've seen solar dehydrators on youtube and some people talk about using their cars. In this weather, it wouldn't take that long, lol.

Your welcome for the link, hope it's useful. I get a kick out of young kids that do more than play computer games and watch tv.
