are doing well! My grandaughter pulled a Nantes and one of the little French round ones tonight.
They look so healthy! They look fully mature, but taste a little bitter. How long can you leave them in the ground after they mature?

From what I've read here, you can leave them virtually as long as you want. Being a biannual plant, they don't go to seed until their 2nd year. The first is all focused on root development....hence why we love our carrots.

You can eat them at any time but they will get sweeter after a cold spell.

Ok, potentially dumb question here from a desert rat (Phoenix, AZ area). Can you put them in the fridge after you pick them to help them sweeten up? We will not have any cold spells here for another 5-6 months.
