Curried Rice and Sweet Potatoes
These days I am more about solstice than Christmas. It is too dark for me! I can see how this time got to be a festival time. Rage against the darkness!
My garden was at hand to raise my spirits once again. I used my fresh sweet potatoes. peas, lettuce, spinach, mint, dill and cilantro to cobble together a dinner. I decided to add the taters and peas to rice along with some curry. Had I had it on hand I might have added some coconut milk and fresh ginger too. I put it all in the rice cooker and waited. The rest went into a salad.
As long as I had my garden I could almost be a vegetarian. Such fun and so many choices and the thrill (cheap thrills granted) of eating with the seasons.

Chopper, that looks yummy. I often duplicate a simple dish I once had in an Indian restaurant which consisted of potatoes, peas, corn, and yellow curry served over rice. I never thought about substituting sweet potatoes for the Irish potatoes, nor did I consider using coconut milk.

Its looks really yummy and delicious. I honestly say that my mouth start watering. My mother was baked such type of dishes as occasionally.
