Sweet potatoes Empty Sweet potatoes

I know I was supposed to harvest my sweeties last week, but it was so wet here in PA. Now, I am digging them up gently, but they have all split for the most part. So, can I cut out the split parts and still eat them? I mean some are just going to be composted because there is no way possible to salvage them. I got the most beautiful bountiful crop last year, and this year it stinks.
