Thanks, camp.
Maybe the color is varietal, or from the lemon juice treatment?

Canning Peaches and Peach Conserve - Page 2 Empty SCORE

Post  walshevak 7/2/2014, 11:18 pm

I'm at my son's house for the week.  Granddaughter totaled my car and I had to come down to deal with insurance and such.  She walked away with just bruises and a cut foot after the airbags deployed.  Yea Subaru.

Went to the farmers market this morning and picked up some local tomatoes (son's are not ripe yet), cantaloupe, and peaches and cream corn.  Went to get blueberries for cobbler which we had for desert tonight.  Stopped by the grower that I got my peaches from last year and he had just sold out for the day.  BUT, he had a basket of extremely bruised fruit that he couldn't sell.  Gave them to me and I made 7 1/2 pints of my bruised peach jam.   His August peaches are a better tasting variety, so I'll wait till next month to get my supply.

Herblover,
Pearson peach farm out of Georgia will be back up here and in your area August 8 at Roush hardware from 9 to 10:30 am.  Call ahead to confirm if you are interested but I'd get there early!
I got a 1/2 bushel yesterday when their refrigerator truck came to Dills with July Prince variety.  These were picked off the trees 3 days ago as hard/ripe.  OMG they are the largest most beautiful fruit.  Should be ready to use in 2 more days.   I had to stand on line with 35 people ahead of me but I think it'll be worth it.  It better be cause I just ordered an ice cream maker too as one of my  peach  preparation  options!!
You can google Pearson Peach Farm for more info.  In business over 100 years.
Oh and the truck delivery schedule is here:

Only canned a couple of times.  This newbie still likes to post her canning effort --

Looks really good, LM!

Made some blueberry jam a few days ago.  It's good, but we think we like jelly better - less seeds, lol!

Rain kept me out of the garden today, but I canned 12 pints of blueberries, 12 quarts of peaches and 8 pints of peach jam.

Sad to say my tomatoes are full of blight so I will not have enough to can this year.

Kaye
Ouch, so sorry to hear about your tomatoes.
I don't understand how you could can so much in one day.  By yourself????   One canner full takes me a whole afternoon usually between the prepping, cooking, clean up of everything.  Does this mean you start at the crack of dawn and don't finish till midnight??
Honestly I am blown away by your production!!

What happens when you buy 2 bushels of peaches? You can and make jam for a few days. Today 7 quarts of peaches, eight 1 1/2 pints of spiced peaches, 4 1/2 pints of ginger peach jam and 4 pints of peach jam. Still have peaches, More tomorrow and my cousin is bringing fresh figs tonight. Depending on how many he brings I'll be making fig preserves and maybe a peachy fig jam tomorrow. Anybody ever made that combo? Any suggestions on a recipe.

Picked grapes in the backyard today to save them from the birds. Not enough for grape hull preserves yet, but there are more on the vine. Saving what I've got and hoping for more in a few days. And my cukes are finally producing so I need to get busy on pickles.

Kaye, That is awesome and I rarely use that word.  Holy Moses I don't know how you can do so much in one or two days.  After about 5-6 hours in the kitchen I'm tired of sweating, my back cramps up and I'm muttering--

Guess I enjoy the results better than the process.

Today's production - eight 1/2 pints of cayenne peach jam, ten 1/2 pints of fig preserves, 4 pints of peach fig jam and 3 jars of peaches.  And the peaches are all done.

Post  walshevak 8/31/2014, 7:48 pm

I have peaches that I froze last year that are still golden even when thawed.  I liberally powered the slices with FRUIT FRESH as I cut them into a large bowl. Then I vacuum sealed them.  No sugar or syrup, just peaches.  I've also done this with zip lock bags.  I like the unsweetened peaches right out of the bag or use in fresh peach recipes.

I just learned this year about freezing the bags of peaches before using the vacuum  sealer.  Apparently this prevents the sealer from sucking up the liquid.

I also canned some quartered peaches this year treated this way.  Cold packed and mashed just enough to get the juices flowing, about a tablespoon of water and process for 30 minutes.  They look good, but haven't opened any yet.

Dip peaches in boiling water for 30 seconds or so and the skins will slip off easily.
