Green Tomato Relish
Green Tomato Relish
This is a delicious relish served with roasted pork, hot dogs, or Brats.
Ingredients:
25 Green Tomatoes
3 Green Bell Peppers
2 Red Bell Peppers
3 Onions
4 Tbsp Non-Iodized Salt
4 C Sugar
3 C White Vinegar
3 Tbsp Mustard Seed
3 Tbsp Celery Seed
Instructions:
1. In food processor finely chop all vegetables. Place chopped vegetables in a glass bowl, cover with salt, and stir to blend. Let stand 3 hours.
2. Boil the sugar, vinegar, and seeds for 5 minutes. Drain the salted vegetables and add them to the boiling liquid. Return to a rolling boil, then simmer for 15 minutes.
3. Pour into hot, sterilized pint jars, leaving ¼” headspace, seal jar with lid and band, and process in a boiling water bath for 10 minutes.
