best relish ever
SWEET ONION RELISH
14 cups @ 11/1/58 per cup
Grind about 1 1/2 gallons sweet Vidalia onions (14-18 medium onions) and mix with 1/2 cup canning, pickling or kosher salt in a large plastic or glass bowl. Let stand for 30 minutes.
Place onions in colander and squeeze as much juice out of them as possible. Let drain for 1 hour.
Fill hot-water bath canner with water and bring to boil. Place 7 pint jars in bath to sterilize.
Combine 1 quart apple cider vinegar, 1 tsp turmeric, 1 tsp pickling spice, sweetener equivalent to 4 1/2 cups sugar* and 2 cups water in Dutch oven.
*NOTE: If using sugar, or a bulk sweetener that measures like sugar, do not add water. The water provides bulk missing by using stevia or packet sweetener.
Bring to boil; add onions and simmer for 30 minutes.
Ladle relish into hot jars, leaving 1/2 inch head space. Adjust 2-piece caps. Place jars in boiling-water and process for 10 minutes. Remove jars from canner and let cool. Remove rings, check seals, label and store.
