Green Tomato Pickles
I'm sharing my green tomato pickle recipe in case anyone's being overrun with too many tomatoes, or if your season is growing short and you know you won't be able to ripen all the green ones on the vine. We love these served with fried catfish or ham 'n' beans.
Green Tomato Pickles
1 gallon green tomatoes
water
1 c. canning salt
5 large, sliced onions
5 c. sugar
2 c. vinegar
Cube green tomatoes. Place tomatoes and onions in a large crock or glass container. Pour enough water over to cover, and sprinkle salt over the top of the water. Let stand 24 hours. Drain and rinse. Place tomatoes and onions in a large kettle. Add sugar and vinegar. Bring to a boil, remove from heat and quickly can in hot, sterilized pint jars. Process 10 minutes in a boiling water bath. Makes 5-6 pints.
