I'm always looking for ways to add some pizazz to cooked veggies, something other than a squeeze of lemon, or a bit of my homemade salad dressing. So I was thrilled when I came across this recipe for flavor bomb cubes. And they can be used in many ways, either on veggies, or I'm thinking they'd be nice on salmon or chicken, too. You could also add basil for a change up. And the best part is, after you make them, you've got a supply in the freezer to use whenever you need. Tried one today with a combo of zucchini and broccoli. Loved it! But I'd like more lemon. When I made it, I added the zest of two lemons, it called for 1 1/2, but honestly? I usually buy a big bag of lemons or limes (whatever's cheaper) at Costco, and juice them all, and freeze the juice in ice cube trays too, so I'm going to try adding one of each. Thinking today, I bet these would be nice with rice, lentils, quinoa. And I'm thinking that cilantro, ginger and garlic would make a nice combo too. I eat very little processed food, and making everything from scratch takes time, so my favorite part of these is that they're made ahead, and ready to use. Hope you enjoy them too.
