Zuccini Recipes
I thought someone posted a recipe for a baked zucchini dish. I think it had zucchini, cheddar cheese, maybe eggs and milk, onions? I think someone liked it with Italian sausage or ham included?
I received 2 large zucchini today from a traditional gardener friend and I have to do something with it! DH does not like zucchini that much unless it' hidden in something.

Dang. He doesn't like apple pie so this won't work. He already saw the zucchini, so this main dish has to be really camouflaged with onion, garlic, sharp cheese, spicy turkey sausage, etc. Something maybe lasagna style?

I recently saw a facebook posting about a spiral cutter for making zoodles (zucchini noodles) to substitute for pasta. It has fallen off my pages now. Same idea as spaghetti squash I guess.

You know, Kay, I wonder if the julienne cutter that came with my Titan peeler we were talking about a few days ago would do the same thing... I'll have to try it once my zukes are up...

According to the recipe sites, any julienne cutter will work.
I do remember that after cutting the zoodles, you needed to salt them and let them sit a while to allow excess water to drain out before using as a pasta substitute.

I have a Mandolin slicer that works really well but is a lot of work to clean up, so we bought the little spiral cutter shown on TV and it works really well to make "pasta." If you buy it or use any slicer one tip is to cut the stem as long as possible for a handle. They include a cap to use to push it down but it's so so effective.
We end up with little cone shaped pieces and we slice up and add to salads.

Zucchini kosher dill pickles. I'm lazy and use the Mrs. Wages mix found at Walmart, but it makes a crisp pickle. Add a hot pepper to each pint jar for a different taste.

You can always make ratatoule ......... if you remove the skin/rind the zuc dissapears in the mush .
Same with a root based soup with or without meat using chicken , beef or ham stock .
It's good for putting a bit of body in the soups turning them from dishwater to a slightly fiberous thickened soup .

Old bay to taste. I use a lot.
Steamed the zuke for just a few minutes to soften and then let it cool. Mix in all the other stuff. Used a 1/2 cup measuring cup to scoop out nice round servings, shaped like a burger. Baked at 400 for about ten minutes, gently flipped for another ten minutes, then under broiler for about three minutes to get that nice crunch on top
