DIY Mini Root Cellar
Too many carrots and short on storage? How about a mini root cellar?

Nifty!
I have seen women looking at jewelry ads with a misty eye and one hand resting on the heart, and I only know what they're feeling because that's how I read the seed catalogs in January - Barbara Kingsolver - Animal, Vegetable, Miracle

This is a super cute idea, but I am going to throw newbie question out there since I have never really had enough to store that long... What is the differece between storing them in the bucket outside or the fridge? Is it just to save room in the fridge or does it make them store better?

Re: DIY Mini Root Cellar
I wonder if this would work in the south where our temperatures get hot fairly quickly in spring.
Other than canning or freezing, is there a good solution for storing vegetables like winter squash, potatoes, onions, carrots, etc. in warm climates? We would grow more for storage if I had a better way to store them.

What about dehydrating?

Hi sfg4uKim,
I guess that would work - but there's nothing like having fresh.

Re: DIY Mini Root Cellar
In the South it is a sort of a problem storing some veggies in the winter. Some things, esp. sw potatoes, which I have lots of, don't like being in the frig. I just put them on the porch, with a tarp under and over them. We have high humidity, and very little cold. The tarp sort of keeps them cool. If I get more produce, I will have to think about ways to store.

Re: DIY Mini Root Cellar
We store ours in our crawl space, however , when I say crawl space , I should say, unfinished basement as our ceiling height in that area is 8 feet, but the floors are still dirt. The temps in there stay at about 65 degrees year round here in Knoxville, TN. We built a rack to hold the 50 gallon, plastic drums, opened the sides to make large storage bins, and stacked them 3 high on the rack.
