Re: How do YOU preserve zucchini
There was a member of this forum a few years ago and her rampicante vines grew longer than 30 feet and tried to undermine the vinyl siding on her house.

Zucchini: Chocolate Zucchini Nut Bread
Funny we should be talking about what to do with our zucchini/zucchetti bounty, but Fine Cooking Magazine sent me a teaser for their take on chocolate-nut zucchini bread. You can read the article/recipe here:

Sounds good to me. Nonna

Yup that's the thread about Meghan's alien squash plant.RoOsTeR wrote:
For those thinking of growing these beware they are also called Rampicante for a reason. It is a very long strong vining squash and very prolific.

I think that's really cool. I'd be king of the house for like a whole week if I grew something that awesome

I agree, a bit of espresso-like coffee always kicks up the flavor of chocolate, and draining the zucchini shreds is a very good idea. In the past, I've noticed zucchini breads made with zucchetta (tromboncino) shreds had a lighter texture, but never stopped to wonder why. Bake on! Nonna

Re: How do YOU preserve zucchini
LOL Rooster... got a few zucchini.??
I have just sent a few off with my son who is visiting a friend now who else does NOT have a zucchini plant.
Interesting thread to read back through. I DID grow a tromboncini zucchini and manoman... it was hard to do. I tried to germinate a whole package and then they all died...
Then bought another package and only just now has one started to grow. There is only the one, so I am not going to pick it, just save for seeds, I sure hope to get more. ALL my other squash are producing like crazy

Re: How do YOU preserve zucchini
Thanks. I also make zucchini fritters similar to the two recipes above except I add crumbled feta to mine. And dill. I'm sure there are a thousand variations, but for me the feta and the dill are what keeps me making them.littlejo wrote:This thread works for me! Here are a couple links, the freezing really works.

Re: How do YOU preserve zucchini
Boy these are wonderful recipes and sure make me hungry! I have saved them all! Thank you ALL for your input and thank you Rooster for refreshing this thread! I sure have some work ahead of me to freeze zucchini, dry some zucchini chips, and hopefully make some zucchini pickles! I just want to do it all and this year I have lots of zucchini! I do think I want to try the trombocini now that I know more about it, but will have to do some planning since the vines are so huge. I will try to post my results.
