My favorite zucchini story was from 30 years ago, when one of my favorite authors was interviewed on a talk show. The host asked about her small town lifestyle and asked if it was safe to leave her car unlocked on the street. She said "Heavens, no! Someone would fill it with zucchini!"

Yesterday our son dropped by unexpectedly. After he left, I found these on the kitchen countertop. I guess I'll be spending the day making zucchini bread. I just found out how to freeze zuke bread, and already knew zuke lasagna would freeze, so Katie and I are swapping out. She makes a killer lasagna and I'm the zuke bread queen, so I gave her the straightest zuke to work her magic while I pull out the grater and get busy.yolos wrote:When you make zucchini bread or just toss the zucchini into the woods.
The best news about my zuke bread recipe is that I make it in the electric steamer, so it can bake outside on the porch and not heat up the house.
As far as "tossing it into the woods, we already know the chickens love it. Today, Bob will see if the deer like it, too. CAN'T HAVE TOO MUCH ZUCCHINI!

Just talked to reverse-zuke-bandit on the phone and he gave us a great idea from his mother-in-law (the grower of the zukes). When she finds those giant ones hiding under a leaf, she hollows them out and stuffs them with whatever she's in the mood for -- broccoli and cheese, pasta and sauce, curried something, whatever. You mean there is someone who has not made Stuffed Zucchini Boats?
Try this:
Ingredients
3 zucchini
1 pound pork sausage
1 cup dry bread crumbs
1 clove garlic, minced
1 32 ounce jar spaghetti sauce
1/2 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
Instructions:
1. Preheat oven to 350ºF.
2. Trim stems from zucchini and slice lengthwise. Scoop out seeds and put in bowl. Mix seeds with sausage, garlic, bread crumbs, and parmesan cheese. Stuff squash with sausage mixture and place in 9x13 inch baking pan. Pour sauce over squash and cover pan with foil.
3. Bake in preheated oven for 45 minutes, or until sausage is cooked. Remove foil and cover with mozzarella cheese. Cook until cheese is melted.

My low carb zucchini bread is a huge success. I've made 4 loaves already. If I make 2 more today, I'll be out of zucchini! (Son says not to worry. )

That is hysterical! I was a little nervous about the quantity of the zucchini that I am growing for the first time. I put one plant in, Green Tiger zucchini, love this veggie! But not killing me with volume. I can handle it! One plant...that may be key?

I like to slice about 1/4" thick & dehydrate into chips. Slightly sweet, nice & crunchy.... I've heard of people sprinkling with ranch spices or garlic, etc...
