Good read Camprn, thanks for sharing. I was shocked at my first attemt at canning spaghetti sauce my 5 large tomatoes boiled down to a half pint Shocked ... Lesson learned need more tomatoes next year.

LOL, I know, astonishing isn't it? Even though I am growing a lot (24) Gilbertie plants, because they are indeterminate they do not all ripen at the same time. This is why I buy a bulk amount from a local organic farmer. The one's I get from him I just can as diced tomatoes. This year I bought 40# and he threw in another 15# extra. Yesterday I canned up 30#= 19 pints tomatoes, 8 pints tomato sauce. Today I am going to roast about 6 pound and try those dehydrated. Maybe sauce or paste the remaining 14#+ Shocked

All the others I grow, usually go into salsa, sauce and dehydrated tomatoes. Maybe I'll take a bunch to the food pantry. I am going to have more than enough this year. What a Face

Do you need the address to my food pantry Wink

I would by them but they cost an arm and a leg up here because they home grown tomatoes are hard to find up here. On the other hand I know tons of people that grow beets and don't like them so are giving them to me, I can't eat enought pickled beets YUM!
