Canned Evil
I got home from work tonight to find that some of my jalapenos were finally ripe (man, do they take a long time).
I picked about two pounds worth, chopped them up and pickled them. My eyes are watering and my lungs are burning like I just swam 20 laps, but I got 4 pint jars full of evil cooling on the counter
I cannot wait to try some!
For the next harvest? I'm breaking out the smoker... mmmm, homemade chipotles...

Oh MAN! I am jealous. I have a handful of serranos and poblanos coming on slowly.

My son still doesn't know what he is going to do with these. He said just rubbing one against his lips set up a fire. He did trade some to another guy.

This reminds me of the first time I made salsa, no gloves... And the miserable day that followed, ugh. I couldn't touch anything without it burning. Your peppers look awaesome!

I discovered the best way to remove pepper oil from your hands with a tablespoon of oil and a teaspoon of salt in your hands and rub your hands together. Then wash your hands with regular soap and water.

Wow, what beautiful evil pickles! Makes my eyes water just thinking about it, though. Hubby decided he wanted a jalepano plant this year, but he's been having trouble thinking of what to do with them, lol. Those plants are much more productive than my bells, unfortunately. He's eaten one raw (!), put some in salsa, and fried one up with meat. It was terrible when he fried it though! My nose burned and eyes watered and I started coughing. Next year he can grow his own if he wants them

just chop and freeze them. They can be added to chili or any other dish you like.

Thanks! I remember when I was a kid, one of the neighbor kids came over to visit while my mom was canning some Hungarian peppers. I'm actually a chemist by trade. I use all kinds of horrible stuff in the lab without gloves, but I don't mess with hot peppers without some rubber gloves.

First Rule of Hot Pepper Handling: After handling hot peppers, never, NEVER touch any part of your body you're fond of. Nonna--been there, done that.
