Freezer Pickles Empty Freezer Pickles

I tried my hand at making freezer pickles yesterday. They are Bread and Butter pickles and seemed the easiest for me.

They have to freeze for at least 2 weeks before I can try them. I'll let you know how they came out. My cukes are a combo of pickling and other types.

Freezer Pickles 09-19-10

You slice the cukes less than a quarter inch thin, preferably pickling cukes. Add the other veggie ingredients and mix together with Kosher salt and allow to drain for 2 hrs.

Freezer Pickles 09-19-11

You mix the spices in a brine made from cider vinegar and sugar.

Freezer Pickles 09-19-12

You fill freezer bags, cover the contents with the brine, seal and freeze.

Sounds simple. I hope they taste good. This is my very first try at pickling.

I'll report on taste and crispness when I've tried them.

I made some freezer pickles this year too. I posted the recipe I used awhile back here:

They taste different than canned -- bright green, fresh, crisp and delicious. I add some chopped red bell peppers too, which makes the green look even brighter. They won't keep long after thawed, even in the fridge, so I freeze them in pint-size freezer bags. I had a bumper crop of little French cucumbers this year and they seemed to get larger overnight, so I made cornichons from the little whole cukes and bread & butter pickles from the larger ones. They are a big hit a church suppers!

pattipa.....That's the recipe I used. I got it here on the forum.

I didn't have enough pickling cukes so used a combo of 3 types so hope they taste as good.

I went just now and took a bag out of my freezer to thaw. I froze them on July 24 and I haven't tried any of that batch yet. I'll post a picture later.

I've used slicing cukes before with this recipe and they were fine. In fact, the reason I first made these freezer pickles was because my dad gave me a couple of grocery bags of slicing cucumbers and I had to do something with them. They may not be quite as crisp, but no one complained!

Today I'm working on basil. I am freezing some plain and some as pesto. My kitchen smells really good right now!

Freezer pickles. Wow. They look and sound fantastic! I have never even heard of them before.
I usually do quick pickles and green beans.

I made these this year and tried my first ones a few weeks ago. Don't be like me and if you are running low on brine, don't just add more vinegar. I did! Big mistake. The pickles were too vinegary. I ran them under cold water to wash off some of the brine before eating them and they were better.

Next year I'll make them 'by the book' and not try to cut corners. If needed, I'll double or triple the brine per instructions and not just add more vinegar.

They sure were bright and lovely, though.

Bea, thanks for the recipe and photos! I just looked a little higher, and saw yours. How did they turn out for crispiness? B&B pickles are my favorite, so I'll be usin this recipe on your recommendation.

Thank you! I am So excited to try this out. Can't wait till next year. My cuke season is over so I am going to use supermarket cukes (ahh-horrors! I know! ) just for the fun of it and see how it turns out.

I am going to search around for some recipes without sugar. I love sugar and B&B pickles, sweet pickles, etc. But trying to greatly limit it from my diet.
