Rhubarb Pie time
It is Rhubarb season, and nothing better than a sweet Rhubarb Pie!
OLD FASHIONED RHUBARB-PIE
Ingredients:
4 cups diced rhubarb
1/2 tsp nutmeg
1/2 tsp cinnamon
pinch of salt
1/4 cup white sugar
1/4 cup brown sugar
1 1/2 tbsp flour
Combine the above ingredients and mix well. Place into an unbaked 10" pie shell.
Combine:
3 eggs
1 small can carnation milk
1/2 cup white sugar
Pour this mixture over the rhubarb.Cover the pie with a solid dough crust, or lattice strips
Bake in a 425ºF oven for 15 minutes, and then reduce heat to 350ºF and continue baking for 30 minutes or until crust is golden brown.

I have never liked rhubarb, but I thought this recipe sounded good. Hopefully a low fat sour cream will work.

I love Rhubarb, which is probably why I grow so much of it. A week or so ago I found this video on making a easy Rhubarb Pie, and had to try it. It was delicious!

At the last minute, they mention that the leaves are poisonous. The recipe looks so easy.

Yes, Rhubarb leaves are very high in oxalic acid, which makes them toxic. Must never be eaten. But, fortunately, they can be composted since the compost process neutralizes the oxalic acid.

I had a hard time catching the amount of flour for the "press" crust in Rockin Robin's Youtube video that OG posted above. Here is a link to the printed recipe.

I made the rhubarb easy pie last night that OG posted. Not having used rhubarb it before, I found that I had purchased only half the amount of called for. And, had to cut in butter for the press pie crust because I only have olive oil for cooking and salads. And, had to use a medium Corning Ware deep casserole dish because the pie pan was too big. Otherwise, it was exactly like the recipe.

That is one of the advantages of growing our own Rhubarb - if we don't have enough for the recipe, we just go out and pull a few more stalks.
BTW, when the DW made the recipe, she used Coconut Oil, and it worked great.
Otherwise, it was exactly like the recipe.
