Yacon Pie
Yacon Pie
Ingredients
- 2 cups of puree
- 2 eggs
- 1 cup of milk
- ¾ cup of brown sugar
- 2 teaspoons of maple extract
- 1 pie crust in 9 inch pie plate
Preheat oven to 425. You need 2 cups of yacon puree. 3 cups of chopped yacons before you peel them should be enough. Peel yacons. Boil yacons until they are soft. Mash into puree. In mixing bowl combine 2 cups of puree, 2 eggs, 1 cup of milk, ¾ cup of brown sugar and 2 teaspoons of maple extract. Pour into pie crust or graham cracker pie crust. Bake at 425 for 15 min, reduce heat to 350 and bake for 30-40 more min. the middle will be set when its done.

My daughter added food coloring to this because she said the color looked very unappetizing.

It has its own taste, kinda hard to describe, very sweet, texture was loose, not as dense as pumpkin.sanderson wrote:Does it taste similar to pumpkin or sweet potato pie?
I really liked it.
The rest of the family could care less, I think it was because they knew I grew it and didn't buy it lol.

I know the feeling. My wife complained about the broccoli I grew- said it didn't taste as good as the broccoli she buys at the market. I then stashed away some broccoli crowns in the fridge for around 10 days, brought them out and after tasting them, my wife proclaimed "that's the way good broccoli should taste".
