Stuffed Bell Pepper Soup

Stuffed Bell Pepper Soup
Time to use some of those Bell Peppers we have been harvesting. Try one of our fall favorites.
Stuffed Bell Pepper Soup
Ingredients:
2# Ground Beef
6 C Water
1 28oz Can Tomato Sauce
4 Fresh Tomatoes Diced
2 C Fresh Bell Peppers Chopped
1 Medium Onion Chopped (Optional)
1 Tsp each Salt & Pepper
2 C Cooked Long Grain Rice
Chopped Fresh Parsley for Garnish
Instructions:
In saucepan cook & stir ground beef until no longer pink. Drain beef.
Stir in all ingredients except rice and Parsley, and bring to a boil.
Reduce heat and simmer uncovered until peppers are tender (25 to 30 minutes).
Add cooked rice and continue simmering for another 10 minutes.
Serve hot in soup bowls, and garnish with chopped parsley.
