Lol, did it get really sour on you? I start tasting mine about day three, and when it tastes good, I stick in in the fridge. I'm not sure what to do about too sour kraut.sanderson wrote:Talk about pucker-face. I tried some last night.

I have been eating the kraut I made before I cut my thumb and it tastes so good. Halfway through the jar and one jar left so I had better get on and make a lot more.
A couple of years ago I made about ten jars at once and that was fine too and I was sorry when I used it all. But I got sidetracked and never made any more until now.
Now that my thumb has healed I will make it a priority to make another batch.

This is the best batch of sauerkraut I have made. I used a ziplock baggie of water to hold the cabbage beneath the liquid. Last night, I sterilized the jars and lids and tools, and carefully packed the sauerkraut. There was enough juice to cover the kraut. They are just being refrigerated, and I will gift 3.
I would like to try a cabbage, apple, carrot and pineapple mix, or at least a cabbage, apple and carrot one. Any one have any idea of the ratios? Two cabbages, one apple and 2 large peeled carrots plus 2 Tablespoons of sea salt?

Did you grow the cabbages, sanderson? How many? I tried some 2 years ago but they got dug up by something. I love sauerkraut!

No, my cabbage endeavors failed twice. So, it's store bought for me. I get the largest and peel off a couple layers, just in case of human mishandling.

Here is the gallon container with the kraut before I "canned" it. This gives me an idea of how much 2 cabbages produce.

I've never tried kraut from the refrigerated section of the store.

Brian, you asked about the failed batch of sauerkraut on another thread.
I tried growing winter cabbage for 2 winters. They never formed tight heads of cabbage. I used the loosey goosey leaves to make sauerkraut and it went bad. Were the leaves too contaminated from the gardeners blowing dog hair and crud over the fence? Don't know. At least they stopped blowing crud over the fence so life in that area has greatly improved.
With a big, tight head, the outer leaves can be carefully removed, leaving a relatively clean head to slice. In other words, only normal microbes.

Mostly been lurking time-to-time! I'll try to visit here more often, though. Lost the help of MDW in our garden (knee problems). I'm acclimatizing (hardening-off) tomatoes, peppers, okra, basil, and marigolds. Meanwhile, I'm waiting for broccoli, cabbage, nasturtium, and leeks to sprout.

Exactly, well almost... I already raised one 4'x6' ground level bed to approximately 2' (too low!). Problem is that the Mel's Mix in some of the outside squares is compacted in "butt cheeks" impressions!sanderson wrote:Oh, maybe time to make a couple of table tops for DW?
