Today we had whole chicken legs ( Knee joint to the whole hip joint ) from the time when I cut up 5 chickens and made loads of chicken stock from the remaining frames . Along with a spoon or two of some tomato mush that I pressure canned earlier this year ,& some home grown parsnip , carrots, onion & garlic as a home made Chinese style stir fry .
Sadly it also included a bit of shop brought broccoli and cauliflower as the cabbage white caterpillars devoured all ours in the beds before us this year .

I really enjoyed the carrots I grew, I need to devote more SF for them! And I would like to try parsnips, too. Do they taste a bit like turnips? I like turnips. Are they hard to grow?

Yesterday I opened up a jar of the green tomato salsa that I had canned a few weeks ago. Quite yummy!

I harvested and pickled the last of my Banana Peppers this weekend for some friends. I started eating from the jar I made a few weeks ago and then are delicious. Just the right amount of heat and pickle taste, a great complement to any sandwich or burger.

SR ... I got the recipe from the "USDA Complete Guide to Home Canning. Guide 3, Selecting, Preparing and Canning Tomatoes and Tomato Products". The recipe is found on page 3-22 and has the title "Tomatillo Green Salsa" but it allows green tomatoes to be substituted for the tomatillos. Picked the last collard greens yesterday. Garden is done for the year (except for some herbs like parsley, rosemary). Pretty good year. I harvested about 90 pounds from about 100 square feet this year.

Those USDA guides & the info from NCHFP is wonderful!!! I use them all the time in my canning classes!

Another scrumptious salad. About 9 varieties of lettuce, 7 varieties of spinach, Daikon Radish microgreens, Buckwheat micorgreens, Pea microgreens all from the garden (microgreens from under lights) with tomato and cucumbers from store. Served 12 adults. Everybody loved it.

yolos ... I'm happy to see you are making good use of your microgreens!!! I put a whole batch of my alfalfa microgreens in a green smoothie a couple of days ago. I need to start some more microgreens.

I picked some Bell Peppers last night for our Stuffed Bell Pepper dinner tonight. I had a mix of red and green peppers which is perfect for the Christmas season. Best part is that the peppers cook in the crock pot all day while we are at work.

CC, We do a ground beef and rice mix, with onions, garlic and other seasonings. Wife also uses a can of Tomato soup, 1/2 in the stuffing mix and the other 1/2 goes on top of the peppers themselves.CapeCoddess wrote:Ooohhhh...pretty. They look like Christmas. What are they stuffed with?

Being late in the year, the peppers were smaller than normal. So instead of stuffing a few big peppers, we stuffed many smaller ones.

SR, I planted 4 Bell pepper plants (2 red and 2 green) and 2 Banana pepper plants this spring. We love to cook with them and they grow well here in LA. Usually, we should get our first freeze around the end of December and that will be the end of the peppers until next Spring.
