Too Many yellow pear tomatoes? Make jam
The following recipe has been around for years and years, in a few variations - one variation uses 2 lemons and 4 cups sugar.
I made 3 - 1/2 pints of it a few days ago, had planned to save the jam until winter
BUT - my housemate saw the jars and opened one to have on bread - she loved it.
Pear tomato jam
8 cups yellow pear tomatoes
1 lemon
3 cups sugar
1 teaspoon salt (not necessary but helps flavor_
4 tablespoons thinly sliced candied ginger (I used crystalized)
1/4 teaspoon pumpkin pie spice
Wash and dry tomatoes.
(some dice the tomatoes, I just cut them in half and left the seeds).
Combine tomatoes, sugar and salt, simmer until sugar is dissolved.
Boil for about 40 minutes.
Add thinly sliced lemon, spices, and sliced ginger.
Boil about 10 minutes longer.
Pour into hot jars and seal at once.
Can be water bathed for about 10 minutes.
