Do you freeze your salsa without cooking? Sorry about the dumb question, but this is the first year I've had enough harvest to begin freezing/preserving.

Goosegirl thank you for your response!  I love fresh salsa so frozen will be a great way to save that fresh flavor!

Donna, no question is a dumb question, especially on this forum!  I think you can freeze without cooking.  I have frozen whole tomatoes that I blanched first to remove the skin.  I put them in freezer bags, zipped it closed and smashed the tomatoes with my hand.  I then pressed out as much air as I could and put them in the freezer in a single layer first so they would freeze fast.  Once they were frozen, I stacked them.  Of course I labeled them before filling the bags.  I then used them as if they were fresh in spaghetti sauce.  Some of the tomatoes were even cherry tomatoes.

But going with sfgteacher's idea, you don't even have to blanch them!  I bet that would make for some very nutritious sauce!  Yummmm!

It always comes down to personal taste. We found that tomatoes loose a lot of their good taste when frozen raw, just like they loose so much flavor when refrigerated. If it is my homegrown tomatoes I want them as tasty as possible. So I roast them first. That seems the easiest way for me. Then I freeze them or can them or what ever.

So last year I made lots of salsa and sauce that I froze in baggies. Some how we found we did not like fumbling around with the bags, too hard to get everything out. It is just a silly thing, but we liked the canned tomatoes better. But still I throw bagged roasted tomatoes in the freezer until I have enough or the time to can. Which sounds a little silly to me when I write it out blush  Well...... I have the excuse that we are going to be tight on freezer space as butchering starts.......

Especially Annie's Salsa! My hubby and kids love it. I first did jelly jars but they go through them too fast so now it is in pints!

+1, you don't need a pressure canner to put up salsa.
