not sure about cabbage. Corn, we wait until the silks are brown and "crunchy", then peel back the husk a bit. Poke the kernel with your fingernail, if it squirts out milky stuff and it's sweet, we pick!! We've just been starting to get our the last couple of weeks, and it's awesome! 2 boxes never produced more than teeny tiny ears, but one box of Silver Queen has some great corn! What kind did you plant?

Cabbages are harvested when they look like a shop purchased cabbage for that variety with the extra leaves that accompany the plant to that size.

 Spring cabbage ... slightly pointed slightly firm  heart , leaves reasonably erect and dark green

Summer or ball cabbage , when the heart is a decent ball size usually with plenty of big open outer leaves.
 
Dutch white cabbage ..ditto  plus heart tends to be a firmer ball and is a much lighter colour

savoy cabbage .. usually ready after the first light frost . compact heart small wrinkly outer leaves ..some times it has a reddish hue on the outer leaves.

 Red cabbage  as for ball cabbage ...... colour deep rich smokey damson light purple  colour .

 My collards are over two feet tall, 18 inch wide fan shaped  leaves are a light green colour .

I don't knbow if this is just because of the global position of the UK but they do taste nice as a single veg and are also good for wrapping up a fair sized individual dollop of a fine cooked thick  Paprika infested  minced beef & rice ( GWAMPKI ??)

@ Southern..I planted Peaches and Cream but the silky parts are missing..I think something ate them..
