Wow Camp, that relish looks fantastic! What all did you put in it? We canned beets and green beans this week. Probably have enough ripe tomatoes to can up some sauce tonight or tomorrow sometime. Have pick green bush beans 3 times so far and the plants are still going strong. Truly amazing how a garden can grow, or sometime not.

I have done lots of salsa and rotel and this weekend I plan on Dill and bread and butter pickles. I love canning and will do some chicken and beef in about a month.

I tried making pickles but my kids started eating them on day 3 ... they were gone by day 7.
... I guess we should call them seasoned vinegar cucumber slices instead.

The results for the marathon canning session yesterday. Orange marmalade, raspberry jam, blueberry lemon conserve, plum jelly, zucchini relish, cucumber relish.

For some folks around here the Cheshire Fair is a big deal. The 4-H kids bring their crafts and livestock, farmers bring their teams of oxen and draft horses for competition. It's a lot of fun. There is a new director at the fair and she is trying to re energize the agricultural aspect of the fair, instead of having the midway and shows being the main attractions. My beekeeping club is setting up a display and I have been asked to do some mini seminars on beekeeping and canning..... don't know if I will have the time to do that this year.
Here are the categories for 2013 exhibition and judging for canned goods at the fair.

So what I am taking for canned good are as follows:
cut green beans
dilly beans
kosher dill pickled cucumbers
bread and butter pickles
zucchini relish
cucumber sweet relish

apple butter
orange marmalade

I have 14 pints of bread and butter pickles, some with a jalapeno pepper included. 4 quarts of dill pickles and 6 pints of dilled zuchinni. I put some hot thai peppers and garlic cloves in some of the zuke spears.

I did pretty ok at the Fair this year. 17 out of 20 jars won and I came in second for sweepstakes and first in theme class. I think I'll buy pizza and beer with my winnings.
