Zucchini Bread
Makes and amazingly moist and wonderful bread that is great for breakfast or an afternoon snack.
Beat:
3 eggs
1 cup vegetable oil
2 cups sugar
Add and Mix:
2 1/2 cups peeled and grated zucchini
3 teaspoons vanilla
Add and Mix:
3 cups flour
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon baking powder
3 teaspoons cinnamon
Bake at 350 degrees for about 1 hour in greased loaf pans.
Makes two loafs.
Nuts, raisins, or chopped dates may be added.
I personally like to substitute about 1/2 cup of apple sauce for half of the oil. Lowers the fat and adds moisture to the end product.

This was fabulous, the only thing I did differently was use coconut oil instead of vegetable oil! I highly recommend it! Thanks for sharing the recipe!

I made 2 loafs from almost this exact recipe. they are in the oven now.
don't you just love it when you can just go out side into your garden pick what you need and make something amazing out of it!!

I have never grown zucchini until this year, and have never made zucchini bread! Anybody have some great recipes they would like to share??? I will freeze it for later.

How about these? Got this recipe from Living Cookbook. They're quite good:
ZUCCHINI COOKIES
(Yum)
1/2 cup butter or oil
1/2 cup honey
1 egg
1/2 tsp. VANILLA EXTRACT
1 cup zucchini, peeled and grated
2 cups whole wheat pastry flour
1 tsp. soda
1 tsp. cinnamon
1/2 tsp. cloves
1 cup chopped nuts
1 cup raisins
Cream together the first 4 ingredients. Add zucchini. Stir in the remaining in¬gredients. Chill dough for 1 hour. Drop by the teaspoonfuls onto a greased cookie sheet. Bake 12-15 minutes at 350°.
Yield: 3 dozen

Thank you! I just processed 16 cups of shredded zucchini with the help of my food processor. 8c in the freezer, 8 c in the fridge for zucchini bread tomorrow night....dang! Love that food processor! Made a 3 hour job a 1 1/2 hour job....and no shredded knuckles !
