Banana Bread
Good use of those bananas that just do not get eaten quick enough and start to get a bit soft and black skinned.
1 cup sugar
2 eggs
1/2 cup margarine
3 crushed ripe bananas
3 tablespoons milk
1 teaspoon baking soda
1/2 tablespoon vinegar
2 cups flour
1 teaspoon vanilla
Mix all above ingredients well and pour into greased and floured loaf pan or cupcake pans.
Bake at 325 degrees for 30 minutes then turn down to 300 degrees for an additional 25 minutes. You may need to adjust cooking times if you use heavy or dark cooking pans. A tooth pick should come out clean from the center of the loaf.
I like to add a bit of apple sauce for added moisture and reduce the margarine amount in relation to the apple sauce.
