pruning peppers and eggplants

I have done some pruning of peppers in the past and this year have been reading about pruning the eggplants. HOWEVER, I watched a video on youtube that showed this guy essentially cutting off the top of the plant (a pepper) to encourage a very strong stem for the future peppers.
Anyone that brave with peppers, or Eggplants?

I have so many peppers this year I have decided to experiment with them.

I don't prune these plants, except for taking off the top most growing tip (to the second set of leaves, just below) when the plants are about a foot tall, or a little taller. This forces lateral growth and generally yields great results. I will trim old leaves from the bottom of the plant if there airflow is becoming restricted or the leaves are failing because of age.
