ways with pumpkins
I have TONS of bright orange squashes out all over my garden. I think some of them started out as other things, but they all ended up ORANGE... Must be a dominant feature when cross pollinating. Then on top of that, a neighbour brought over a massive pumpkin at the end of the season and I cleaned it out in the yard, so I think there are several volunteers out there as well.
I was reading last night about canning pumpkins, you just peel and core and cut into one inch chunks and boil for 2 minutes and then pack jars, add boiling water and then pressure can them.
Sounds like they would then be very easy to just make into purree and then pie etc etc.
Last year I roasted the pieces of pumpkin and then pureed them and then froze them. This other way seems like it might be easier and not take up as much of my freezer. Seems like canning would be easier.
Then 2 years ago I pureed the pumpkins, added spice and yoghurt and then spread them out on parchment paper in my dryer and made them into fruit leather.
Just a few thoughts.
