Pickled Compost?

Has anyone tried pickling their kitchen waste before adding it to your garden similar to the Bokashi method?

No, but I have whirled it in the blender when the compost can needed a drink with its food.

I have not. I toss into the new pile a bit of older compost; that will introduce the needed bacteria.

Well, the thing I'm interested in is composting things that are not supposed to be composted like cheese, cooked foods and the like without worrying about ratios and greens and browns or any of that.

I just throw all that stuff in and cover it. Pretty much the only things I don't put in the pile are meat and fats to keep the vermin down. Everything else will rot just fine thanks to microbes, molds and fungus. No worries. Very Happy

Nice. I guess it all break down, hey? I'm also considering just burying my kitchen waste and forgo the compost pile altogether, perhaps taking one bed out of production for the year, just growing cover crops and burying wastes.

Have tried this way very much?

I like to have as much production space in use as possible to actually grow stuff. The compost goes at it's own rate in it's own space and when it's done goes into the garden to grow stuff. Oh yeah, I also add spoiled milk to the compost, no worries.
