Beet question..

Beet question..
How do you know your beets are ready for picking so you can start pickling? They went in the ground the first week of May, but alot of them weren't coming up, so in any of the empty spaces, I slammed another seed into it. In some spots I can see the tops of the beets. Is it possible to leave them in too long? I don't wanna pick and find its not ready yet. Is there a way to store them till more are ready once I do start picking if there aren't too many ready to go?

Hmmm, I am no expert but feel free to stick your finger in the dirt next to the beets to see if you think they are big enough! Beets will store! Here is a link that might be a little more helpful http://www.ehow.com/how_8276_harvest-store-beets.html

I am new to this as well, and am aiming at large beets before canning them, like Cheyannarach said, you can feel with your finger along the edge to see how big they are.
Also the ones that are bigger seem to have bigger foliage.
Why don't you pick one of them and try it and see how it is.
Sorry I am not more help, this is my second beet year and seem to have no "pearls" to pass on about beets.

My beets push out of the ground so I can see how big they are ....
