beet pic
radishes and spinach didn't do too well this spring, but the beets are about the best I've ever grown...these came from a non-Mel's Mix area of the garden that I have been amending over the past year with shredded leaf litter, coffee grounds, egg shells, and campfire ashes. The beets in Mels Mix were actually planted a few weeks ahead of these but are a little behind in development...not sure if they'll beat these or not.

I have a friend that gardens row-style and each year he excavates ash from their outdoor fire pit and works into the soil where he plants beets and carrots...I think they like plenty of phosphorus from the wood ash. Hope my carrots turn out this well.

Looks like you've got a great little helper, and those are some great looking beets I'm not a beet fan, but I love the greens off of them
My radishes haven't done the greatest either, and some of my spinach is outstanding, but some of my spinach is pretty wimpish too

I would eat as many beets as I could every day...loved them since I was a kid and my 2-year old daughter mows through them like candy. If you read the label on a can of beets, all the nutrient levels have been cooked/ canned out down to 0%.
She is a good helper...maybe someday keeping an eye on weeds and pests may be on her chore list.

Do not like beets in any shape or form....
However...they will be in my fall garden again...my grandkids found out they like them when I tried to grow them last year.
They were even eating them raw! Nope I did not try..beets and okra...forced to eat them as a kid and swore I would not touch them again.
My brother loves pickled beets. Was not a good year but I will do it again.

+1 more EWWWW! I have only had pickled beets and they literally gag me. FIL talked me into trying them roasted, so I planted some last year. They didn't develop any roots - the few that actually sprouted. I may try a few this year to tell FIL that I DID try them. But, not holding out much hope of liking them.....

For those who like beets how do you fix them? The canned stuff never impressed me and I have never tried growing them.

Nothing fancy, boil till just softened. The skin slips right off. Sweet and looks pretty too.

Powerful Food
If you are not used to eating beets you need to be careful with them until you see how your body reacts. If I eat too many I get quite sick. I haven't figured out yet if it is the beet sugar or something else. Beet sugar causes problems for some people and if it is that you just reduce the quantity until it doesn't cause the problem.
Beets are one of the most powerful foods for liver health. Lots of articles about what goes on with beets and liver function if you want to google it.
I like to chop them into cubes and make sort of a borscht with them. I love the earthy sweet flavor. My wife can't see how I eat them, says they taste like soil. I say that is what is so yummy about them .
Need to be careful with beets and beet juice. Some very powerful compounds in them that like anything are good in moderation but can cause you some issues so proceed in moderation until you know.

Beets
Growing up I only had beets boiled with butter on them or pickled beets. Then when my son was born the hospital served me Harvard beets and I loved them. Since then I've had them in borscht, in a gelatin mold, in a cream sauce, and several other ways. My son is now almost 53 and the whole family loves beets.

Great looking beets! I love them boiled or pickled. My husband doesn't like beets but last year I made a pickled beet relish and he will eat that. Hoping my beets turn out well this year.
