I posted in another thread some ideas for chive blossoms and was asked to share them here.

Chive blossom vinegar-Put a couple of chive blossoms (on the stem) in a bottle of white vinegar (I use cleaned bottles from wine coolers, store bought vinegars, etc). Let sit in a dark place for a couple of weeks; then taste to see if the flavor is strong enough to suit you. This is kind of vague, but I don't really use specific proportions. It will give you a vinegar with a lovely pink color.

Chive blossom butter-add 1/2 cup chopped chive blossoms and stems to 1 lb softened butter. Mix well. I freeze it is a plastic ice cube tray so each cube is approx. 1T. When frozen pop them out and place in a freezer bag or vacuum pack.

Chive blossom vinegar is very tasty as the vinegar part of almost any homemade salad dressing. I prefer a stronger chive blossom flavor, so fill a jar with wished and salad-spinner dried fresh chive blossoms, then add the vinegar. Proceed as herblover suggested. Warning, the beautiful pink color fades away if vinegar is exposed to light for very long. However, a neat cheat is to add a smidgeon of pink frosting coloring to the vinegar after the blossoms are removed, and you are bottling the vinegar for display, or gift giving. Remember to return a fresh new blossom to the vinegar for visual appeal.
