Carrot Tops?
Carrots are finally ready for picking. What do you do with the carrot tops? Can you eat them? It's be nice if you could instead of just tossing them into the compost pile.

Well I will start by saying there is some debate "out there in internet land" that carrot tops are poisonous. I have eaten them for a long time and am still alive, but I want you to know that tidbit first.
The tops can be a little bitter (depending on who you ask) but I like them. I've eaten them in my salads, used them for soup stock, in stir fry, as part of a veggie cracker I make...there are lots of ways to use them. I try my best to use as much of the plant as I can. It is kinda fun to think "I wonder who ever thought to eat this, or make that" ...I mean, once upon a time, someone had never tried a carrot! That being said, I am cautious...but try to take a culinary adventure if/when I can.
I hope others will post their uses! I'm always happy for a new recipe!

Yeah, my compost pile is starting to like the looks of those carrot tops as well. I'll probably just plow them under like most everything else.

I noticed you're Damon from Greenhorn Gardening! That's fun, I've actually listened to your podcasts! I work a 9-5, so I try to listen to something about a garden if I can't be in my garden!

It's nice to know that I can eat the green part of some root crops, such as beets etc, and to add carrot tops to that list.

I too use carrot tops for stir fry. In the winter when I don't have the fresh carrot tops the stir fry seems to be missing something. Am going to check the suggested link here to see if I can find some other great uses for them.

Last year I proudly showed my little grandson my first SFG. He stood with hands on hips and said "I thought you were growing carrots! Those aren't orange!" Of course he couldn't see the root under the ground. Guess he got a little gardening education that day. Love those kiddos!
