I saw some folks say on here they didn't end up liking arugula and won't grow it again. I tried arugula for the first time with this recipe, and now I want to grow it just for this! I used regular sausage, not spicy, and roasted red sweet peppers instead of the sun-dried tomatoes. Also try substituting feta cheese for the parmesan for another variation.

Spicy Sausage and Arugula Penne

start to finish: 20 minutes; serves 6

12 ounces penne pasta

1 lb spicy Italian sausage meat

1 large yellow onions, diced

1/2 cup oil-packed sun-dried tomatoes, chopped

5-ounce package arugula

1 cup grated parmesan cheese

Cook pasta al dente according to package directions. Reserve 1/4 cup of the cooking water, then drain and set aside.

In a large saute pan over medium-high, brown the sausage and onion. Add the sun-dried tomatoes and arugula; toss well. Add the pasta and toss until heated through and arugula begins to wilt.

Add half of the cheese and a splash of the reserved pasta cooking water. Toss well, adding more water if desired to create a sauce. Serve with remaining cheese to be sprinkled on top.

Soooo quick, easy, and delicious!

Pasta and Arugula is a brilliant combination..We grow arugula year around. Love it.

Have you ever tried this salad?

Pear, Pine nut & Arugula…

A bunch of Arugula

Handful of pine nuts

Pear

Block of parmesan (Reggiano is lovely)

Olive oil..(Extra virgin adds a great flavor)

Lightly toast your pine nuts (can use pecans) in a dry sauté pan, stirring often to prevent burning.

Take the washed and spun dry arugula and place a bed on a salad plate.

Then slice a ripe Bosc (or your choice) pear and place a few (or lots) of slices on the arugala. Toss on toasted pine nuts to your liking. Next get take the block of good parmesan and slice it with you potato peeler. Use as much as you like. Dress with olive oil.

You can also use it for making pesto…

Nice on a Panini as well….
