Cappy's Sausage Recipe
I'm sharing Cappy's sausage recipe. As the winter wears on, I like to add a link of smashed, sauteed sausage to change out the flavor of winter veggies, soups and pasta. With my new Food Saver, I hope to make and freeze patties this fall. Lean pork or poultry.

Just so yall know this is meant to be loose frozen sausage and not linked or smoked. to turn it into a good link or smoked sausage you need to add a rounded teaspoon of pink curing salt to 10 lbs of the recipe. mix well and let sit for 3 or 4 hours before casing and hanging ti in the smoker, if smoking ya need to add a bit of fluid water or some apple juice works well. The above recipe we make often and keep on hand its great loose in sauces and chilies, great as patties ro blinded with beef for burgers.
