The Best Eggplant Recipe ever
Even non-eggplant eaters love this:
EGGPLANT SALAD
1 cup olive oil
6 tablespoons fresh lemon juice
2 tablespoon Dijon mustard (optional)
2 garlic clove, chopped and mashed to a paste with 2 teaspoon salt
1 cup packed fresh basil leaves, washed well and spun dry
2 large eggplants (about 1 1/2 pounds each), diced into ¾ inch squares – more
or less
1/2 cup pine nuts, toasted (put pine nuts in dry, hot pan and heat until toasted lightly)
Preheat broiler.
In a blender, blend oil, lemon juice, mustard, garlic, salt, and half of
basil until smooth. In a measuring cup, reserve 1/2 cup dressing and in a large
bowl, toss remaining dressing with diced eggplant.
Arrange half of diced eggplant (or all if they will fit – depending on pan
and oven size) in one layer on a large
baking sheet and broil about 4 inches from heat until golden, 8 to 10 minutes.
Turn and broil until golden, 5 to 7 minutes more. Transfer eggplant to a
plate to cool and broil remaining eggplant in same manner.
Arrange eggplant and remaining basil on a platter. Drizzle salad with
reserved dressing and sprinkle with pine nuts.
Serves 12 as part of a buffet.
Notes: garlic and salt combo not needed – just add same amount of chopped
garlic and salt to blender

I didn't plant eggplant this year, but think I will next year - seeing this recipe makes me regret not planting one this year lol

Eggplant is my "New" plant this year. I try to plant something I have never grown or eaten before to see if I do in fact like it. I remember years ago during lent someone brought a grilled eggplant sandwich to work. I tried it and really liked it. But I have also had eggplant lasagna which I did not care for. I am always on the look out for new ways to use the veggies I grow. As long as my plants do well I will be trying this one for sure. Thank you.

Thanks, Chopper, this looks like a great recipe.
I love caponata and make it often when the eggplants are producing. This will make a nice change of pace.

I looked it up online and it looks really good. There are many variations of course, but I can't wait to try them! AND it uses tomatoes - something we are going to have way too much of soon.
