+1 madnicmom. Yesterday for the first time in years we had Thanksgiving with my momma and her sister (aunt). I got a little chuckle out of this thread and a lil bocephus came to mind as I looked at my grandmothers old china and silver on the table. But you know what, it did make for some really, really, old fond memories. And it looked beautiful to boot. In a nutshell, it was very special.

I personally don't care about all the china and fancy stuff, but if it means a lot to the host(ess) then it means a lot to me! Momma's like to create memories, it's what we do! God bless mommas!!

Well, yesterday the turkey went in the oven at 11:37, and the power went out at 11:39, for me and my neighbors who were joining us. So off to Mom's house, where she has the tiniest stove, but the most reliable power. (Senior community) Dinner was only an hour late! 8-)

I started off the day by watching my Green Bay Packers. I watched the first half, and then my Mom and I went to my sister-in-law's parents' house for a fabulous dinner. A REALLY fabulous dinner with about 20 people.
After dinner, my brother and I watched the 4th quarter of the Packers' game. Tonight I'm going to watch the 3rd quarter that I missed.
Go Packers!!

No they don't Not fresh anyways. Most commercial eggs are cleaned and all the natural protective coating is washed off. Then they are refridgerated. Once that happens, then yes they do need to be. We don't wash our eggs and they stay perfectly fine sitting out. If we plan on holding on to many or if people want eggs, then we do put them in the fridge. But normal day to day use, they sit out. The shelf life obviously won't be as long as if they were in the fridge. But yeah, they are just fine!

I've read that washed eggs are good for 1-2 months unrefrigerated. Old school sailors would coat their eggs with a thin layer of grease or mineral oil and hide them in cubby holes onboard. It is said their eggs would last up to a year.
In a lot of countries, refrigerating eggs is unheard of.

Commercial eggs ie those sold at the grocery store, are required to be washed, which removes the chicken's bloom which is the natural coating that keeps air from entering through the shell.
If you buy your eggs from the small farmer down the road, you would have to ask them if they wash their eggs. Unwashed will last longer.

Fill a bowl with water deeper than an egg is long.
Place eggs in bowl.
If eggs settle to the bottom and lay on their side...they are as fresh as can be can be and yolks do not need to be thoroughly cooked.
If eggs, while still on the bottom of the bowl, start pivoting upward they are a little less fresh but can still be used for baking, scrambling, etc.
When completely upright but still on the bottom of the bowl...the egg is still ok but must be thoroughly cooked (scrambling, used in batter for frying, etc.)
Once the egg actually starts to float and is no longer in contact with the bottom of the bowl...toss it!

I have floated eggs before, and it works!
And like boffer hit on, I think we are one of the few countries that refrigerate our eggs. Plus, I know where mine come from and the conditions.
