pumpkin shortage, ... again!
I wanted to make a pumpkin spice cake and went to my trusty megastore and went nuts trying to find canned pumpkin. I finally found an employee who said they didn't have a can of pumpkin in the store and Libby's couldn't tell them when they would have canned pumpkin or how much they would have.
So I bought a pie pumpkin, even though it felt somewhat hollow, and made my own. Pie pumpkins, ON SALE, were $2.00 a pop.
So if you want a pumpkin pie this year, find some pie pumpkins, cook them up (I did mine in the pressure cooker) and freeze them.
I saved some of my seeds from the pumpkin and have put that on my list for next year's SFG!

By the way, those canned "pumpkin" products are made from orange winter squash more like acorn and butternut squash than like pumpkin. It's about the time of year you can start finding those at farmers markets. http://www.slashfood.com/2005/10/24/canned-pumpkin-is-it-really-pumpkin/

Well, well, like Charlie Brown I've been looking for the Great Pumpkin and it doesn't really exist. Here's some more interesting items about the pumpkin canned by Libby.

In the past I have used halloween pumpkins for pies. I cut the jack o lantern on halloween day for use that night. Then after trick or treaters are finished, I peel the pumpkin. cut into cubes, add a little water and stew down into a thick mush. Package 2 cups of mush into ziplock packages and freeze until needed. Each pack makes one pie. So there Libby's. Ha!!

I've always used a small "sugar pie pumpkin" to make my pies. One year I didn't find any and bought Libby's. Well, everyone noted that my pies were not as tasty.
I believe that most of the flavor of a pumpkin pie is in the spices that you use anyway. The pie pumpkin is not as orange as Libby's.
