Mustard Greens Empty Mustard Greens

Growing up in Georgia, I learned to love mustard greens (collards, not
so much). Since living in Michigan, I have only tried growing it once,
and that was a spring planting, which of course bolted in the summer,
and wasn't that good to begin with. I know in the south, it's more of a fall crop, so I would like to try growing it again, but this
time in the fall. Has anyone here in the Midwest grown it, and if so,
when did you plant your transplants outdoors or direct sewed seeds?
I want to make sure I have enough time for it to produce well before we get a hard freeze. Also, is there a particular variety that grows better here.

I got some free mustard seeds this year and I just scattered them in a square about a month ago. They are growing great but they just started flowering. I have no idea what to do with them though?

Once they start flowering, the greens will be more bitter. I happen to like mine a little bitter, so that's okay with me. But if you leave them too long after flowering, they'll begin to get tough. I clean the leaves and remove the center rib. I buy a ham hock and boil it in a small amount of water for a couple hours. Then I put the greens in the pot and cook till very tender. Season with salt as desired. When I eat them, I add a little hot pepper vinegar. I always serve them with cornbread which I soak in the "pot liquor". Very Happy YUMMMM!!
