For those looking for something to do with garlic scapes, Terrie (my wife) posted a recipe for garlic scape hummus on our blog. It was great and there aren't many scape recipes online. Noah our youngest has been taking it for lunch at his summer camp so me and Terrie haven't gotten as much as we wanted, but next year quite a bit of the scapes will be designated for hummus.

Made me a batch of this! YUM!!!!! I am taking it over to my friend's house today who let me cut some of her garlic scapes. When I was at her house last weekend she asked me to look at her garlic and tell her if she had let it go too long - it was getting ready to flower and she thought she may have lost her garlic crop. I took one look at it and screamed SCAPES!!!!! She had heard of scapes but did not know what they were, and was glad to hear that her garlic crop was just fine. I am taking her a taste of her bounty and she has LOTS more so she can make her own.

Hardneck garlic will send up a flower stalk - the immature flower stalk is the scape. Delicious!

From what I have read, only the hardneck variety puts up scapes. I am planning on giving them a try this fall.

You are correct about only the hard necks only making scapes, possibly very rarely another obscure variety may have the habit. My 11 varieties are 6&5 hard necks in the majority. Made that hummus recipe about a month age and this prompted me to prepare another batch for this evenings dinner and snacks beyond. Both it and the pesto from scapes are dynamite recipes especially if you enjoy a heavier garlic influence on the palate.

Westie, I think it is grounds for removal from the forum to describe a recipe and not include it!lol! What's this pesto from scapes recipe? I WANT TO TRY IT! My friend that gave me the scapes for the hummus told me to come out and cut the rest of them, and any other herbs I want.

GIMME THE RECIPE AND NO ONE GETS HURT!

Garlic Scape Pesto

From "MaryJane's Ideabook, Cookbook, Lifebook" (Potter, 2005)

1/4 pound garlic scapes
1/2 cup olive oil
1 cup grated parmesan cheese
3 tablespoons fresh lime juice
Salt

Puree garlic scapes and olive oil in a blender or food processor until smooth. Stir in parmesan cheese and lime juice and salt, to taste.

there is some great info on the link above i got off another thread here Very Happy

she says you can also make this pesto into a salad dressing and she said

you can make the pesto with just enough liquid to hold it together – leaving out the parmesan cheese – and put it into zip-top bags and freeze it. Then, you can take it out, add the cheese and a little more olive oil and have some great summer yummy treat!

I was wondering if it might be better of perhaps they were cooked first

Well I snook out into the garden between rain storms and snaffled all the garlic scrapes except for one ( This will be allowed to go to seed )

Duly cut off all above the base of the flower cluster and cut the remainder into 2 inch lengths and then sauteed them with some mange tout style peas. har this with our version of Kedgeriee.

Verdict... a feast fit for a king ,. will go this route again next year as not all the garlic we have has hard stems.

Here is a picture or two and a couple of pictures of garlics .. I've never seen the curly topped ones before, have any of you lot??? They came out of a supermarket bulb and were Spanish in origin .

I had the same problem this morning when making pesto. I finally gave up on the food processor as it seemed to be getting stuck on the more fibrous pieces. Instead I tipped it into a bowl with the olive oil and used my hand blender. It was much easier and gave me a lovely smooth consistency.

I just thought my food processor was getting old! However, I did get them to a smooth enough consistency once I put the chickpeas in with them and let it whirl. Of course, 7 hours later Hubby said "You had something garlic today, didn't you!" tongue

I wonder if there is a "critical garlic level" you get to when as long as everyone keeps their levels up no one notices it.
That certainly seems to be where our household is. I never notice it on anyone else..... ah well..... perhaps they are just bein polite to me..... bear hug

I think there must be a critical level! When I was growing up, the only thing in our house that ever got anyone's attention was sauerkraut! All other food pungencies were just the norm (altho' most of my family would consider 'normal' an insult!)
